Sausage tray bake


Serves:  4 

Prep Time 30 mins

Cook Time 40 mins

1 pack Galloway Pork Sausages
2 tbsp olive oil
400g pack new potatoes ( halved )
3 red peppers cut into large chunks
2 cloves garlic finely sliced
2 red onions wedged into 8’s
3-4 sprigs fresh thyme
Salt & pepper to taste


Pre heat oven to 200 degrees

Cut the vegetables and potatoes into even sized large chunks and toss together with salt , pepper, sliced garlic and olive oil and place onto a roasting tray

Place the sausages and thyme sprigs on top of the vegetables and place into the oven . After 25 minutes turn the sausages and vegetables and return to the oven for another 25- 40 minutes until sausages are nicely browned and the potatoes are cooked through.
