Cooking Instructions
Remove all packaging, allow product to stand at room temperature for 15 minutes before cooking and preheat oven.
OVEN
Preheat oven to 180°C / 160°C / Gas Mark 4. For best results, brush joint with oil and sear all over in a dry pan on a HIGH heat. Alternatively, sear in the oven at 220°C / Fan 200°C / Gas 7 for 10 minutes then reduce temperature to 180°C / 160°C / Gas Mark 4. Transfer joint to roasting tray and season with salt and black pepper. Place tray directly onto middle shelf of oven.
Rare: 55 minutes
Medium: 60 minutes
Well done: 70 minutes
Remove from oven, cover with foil and allow to stand for 15 minutes before carving. For best results, carve thinly using a sharp knife.
